Chicken Kiev with a twist!!

I have been dying to try this recipe! My dad's girlfriend is a culinary chef and there was one night when this was the dinner she had prepared for us. Even though the ingredients were nothing special this chicken was so incredibly moist and perfect. I had to try it on my own.

  1. Combine the butter, thyme, parsley and rosemary,feta,sun dried tomato/roasted red pepper; shape into two cubes. Cover and freeze until firm, about 10 minutes.
  2. Meanwhile, in a shallow bowl, combine the flour, salt and pepper. In another shallow bowl, lightly whisk egg. In a third bowl, combine the bread crumbs, Parmesan cheese and paprika.
  3. Flatten chicken to 1/4-in. thickness. Place a butter cube on the center of each. Roll up and tuck in ends; secure with toothpicks. Coat chicken with flour mixture, dip in egg, then roll in crumb mixture.
  4. Place seam side down in an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 425° for 20-25 minutes or until a thermometer reads 170°. Discard toothpicks. Yield: 2 servings

I am such a fan of tomato soup, I had to give this a try!  At first I was wondering how chickpeas were going to look in tomato soup. Well once I blended all the ingredients together I was surprised to see the texture of the soup turn into a bisque like consistency.  Not only is this a healthy form of protein and fiber but no milk or heavy cream had to be added at all for this to come out amazing!!!! I highly recommend you give this a try. Let me know what you think.

    Add first 4 ingredients and half the tomatoes & chickpeas to a pot and bring to light boil.

    Blend with hand blender or regular blender and place back onto stove top.

    Stir in the reserved ingredients and cook until thoroughly heated. Enjoy!

    **Vitamix directions: Place all ingredients, except the reserved ingredients, into the Vitamix container in the order listed and secure lid. Select Variable 1. Turn machine on and quickly increase speed to Variable 10, then to High. Blend for 6-7 minutes or until heavy steam escapes from the vented lid.

    Reduce speed to Variable 4 and remove the lid plug. Add the remaining reserved ingredients through the lid plug opening. Blend for an additional 10 seconds.
